The main ingredients of mì quảng are rice noodles, meat, shrimp and herbs, most commonly served with a small amount of broth, which is generally infused with turmeric.


Cao Lau (Cao lầu)

Cao lầu consists of pork and greens on a bed of rice noodles made from rice which has been soaked in lye water, giving them a characteristic texture and colour that sets the dish apart from other Vietnamese noodle dishes, including others from the same region, such as mì Quảng.

The main ingredients of cao lầu are rice noodles, meat, greens, bean sprouts, and herbs, most commonly served with a small amount of broth. The meat used is typically pork, either shredded or sliced char siu-style pork (xa xiu), but shrimp (tôm) can also be used.


Cau Mong roasted veal (Bê thui cầu mống)

Cau Mong Rare Beef has existed for quite a long time and become really well-known not only to the locals but also to many visitors from other provinces.

Citronella and lemon bananas are added into the belly of the calf when roasting to make the meat soft and delicious. When slicing the beef, the cook must carefully and skillfully separate the beef from the leather. Next, he must prepare his own sauce, a mixture of fish sauce, chili, garlic, ginger and lime. The beef tastes best when we eat it with fresh vegetables like green bananas, basil, coriander, etc.
