Ninh Hoa spring rolls (Nem nướng Ninh Hòa) is made mostly of hot meat from a pig leg, using a blender or pestle pounding and pounding, then mixing the garlic, pepper, chopped pork skin together. There are only 2 types of leaves: Cicca acida and Hura crepitans to make spring roll become sour. Cicca acida leaves make spring roll more delicous and easy to find in Khanh Hoa. Sour taste of these leaves are very strange, far different from spring roll in district market (Binh Dinh) which is made by guava leaves (Binh Dinh) or Thu Duc spring rolls (Ho Chi Minh City) made by Hura crepitan leaves. Spring rolls served with garlic and sauce which includes peppers, garlic, sugar, slurry fish sauce. The sweet and spicy taste of fish sauce is very attractive.
